THE STORY OF THIS LOT

Ayla is a washing station in the village of Shantawene, in the heart of the Sidama region, run by Testi Coffee, a family-owned business. It takes in cherries from hundreds of smallholders in the area, who grow coffee on tiny plots, almost gardens, with no fertilizers or pesticides. Here the coffee is natural: the whole cherry dries in the sun on raised beds for one to three weeks, turned constantly. That process concentrates the sweetness and gives Sidama the character that makes it one of Ethiopia's finest grades- high elevation, fertile soil, and slow ripening, in the country that is the birthplace of arabica.

THIS COFFEE IS FOR YOU IF
You want a sweet, comforting filter, not aggressive acidity.
You like an Ethiopian natural with body and chocolate notes.
You drink your coffee black and want caramel and praline in the cup.

Frequently asked questions

What is the Trama House Filter?

It's our permanent filter coffee, always filled with a fresh seasonal lot. When one lot sells out, we replace it with another chosen to the same standard: clean sweetness, defined body and low, gentle acidity. The current origin, process and tasting notes are always shown at the top of this page and on the bag.

How should I brew it?

It's roasted for filter brewing: V60, Chemex, AeroPress, Kalita or any pour-over. A good starting recipe is 15g of coffee to 250g of water (1:16), medium-fine grind, water at 93°C and a total brew time of around 3 minutes. If it tastes sour or thin, grind finer. If it tastes bitter or dry, grind coarser.

Can I use it for espresso or a moka pot?

You can, but it isn't roasted for it. The House Filter is a light roast developed for filter methods, so in espresso it will taste brighter and be harder to dial in. In a moka pot it works with a slightly coarser grind and low heat.
