Elevating the Coffee Culture in Braga: Trama Launches at SAGA

Specialty coffee isn’t just about caffeine; it’s a craft of precision, terroir, and daily ritual. Today, we are proud to formally launch Trama Coffee, an independent, digital-native platform created to elevate the specialty coffee ecosystem for demanding home baristas and forward-thinking coffee shops across Portugal and Spain.

While our e-commerce store (www.trama-coffee.com) powers 24/48h delivery across Iberia, we believe every digital brand needs a physical heartbeat. No better place to launch our first physical shelf than SAGA,  Braga’s staple destination for artisanal sourdough, lifestyle, and modern café culture.

Starting today, you can taste, feel, and buy Trama’s freshly roasted specialty coffee beans and precision barista gear directly at SAGA in Braga.

Roasted in Braga, Sourced with Intent

Every bean in a Trama bag is sourced with absolute transparency and roasted locally in Braga to bring out the distinct chemical potential of its origin. We launch with two core house profiles designed to deliver consistency without compromising character.

Whether you dial in your shots on an espresso machine or pour water over a V60, these two launch lots represent the core foundation of our coffee philosophy.

1. The House Espresso: Costa Rica · Central Valley (Washed)

Our anchor espresso is built for clarity, balance, and sweetness. The coffee lot changes with seasonality, but the standard remains unwavering: a sweet, round shot with no rough edges that shines equally bright on its own or paired with textured milk.

  • Origin: Costa Rica

  • Region: Central Valley (Café Vida Lot)

  • Process: Washed (Mechanical Demucilager)

  • Elevation: 1,200 – 1,800 m

  • Tasting Notes: Apricot, Vanilla, Elderflower

  • Profile: Sweet, medium body, silky finish

The Story:

The Central Valley is the historic heartland of Costa Rican coffee, where high elevation, steady rainfall, and volcanic soils converge to create a clean cup profile. Sourced from smallholder micromills through Café Vida, this lot utilizes mechanical demucilaging, an eco-efficient washing technique regulated by Costa Rica’s national coffee authority to preserve water.

This Coffee is For You If:

  • You want an easy-to-dial espresso at home with pleasant, gentle acidity.

  • You enjoy milk-based drinks (cappuccinos, flat whites) with vanilla and floral undertones.

  • You prefer clean, precise washed roasts over dark, bitter commercial roasts.

2. The House Filter: Ethiopia · Sidama (Natural)

Our dedicated filter house lot is curated for drip and manual brew methods (V60, Chemex, AeroPress, Kalita Wave). It provides a clean, deep sweetness and a smooth, comforting body that invites you to sip slowly.

  • Origin: Ethiopia

  • Region: Sidama (Ayla Station, Shantawene Village)

  • Process: Natural (Sun-dried on raised African beds for 1–3 weeks)

  • Variety: Heirloom (Native Ethiopian varieties)

  • Elevation: 1,950 – 2,150 m

  • Tasting Notes: Caramel, Praline, Milk Chocolate

  • Profile: Rich sweetness, defined body, soft acidity

The Story:

Produced at the Ayla washing station operated by Testi Coffee in Shantawene, Sidama, this lot brings together cherries grown on tiny garden-style plots by hundreds of smallholders. The cherries are dried whole under the sun, allowing natural sugars to concentrate inside the bean. Grown at extreme altitudes near 2,150 meters, this naturally processed Heirloom coffee highlights why Ethiopia remains the undisputed birthplace of Arabica.

This Coffee is For You If:

  • You love drinking black filter coffee with a velvety chocolate and caramel body.

  • You enjoy sweet Ethiopian naturally processed coffees without overbearing fermented acidity.

  • You brew primarily with V60, Chemex, AeroPress, or batch filter.

More Than Coffee: Precision Gear for Home Baristas

Good coffee starts long before the water hits the grounds. Alongside our freshly roasted beans, the Trama shelf at SAGA features an initial selection of high-performance accessories and precision tools:

  • Precision Scales (0.1g accuracy): Dial in your coffee-to-water ratios with exact flow rates.

  • Filter Papers & Manual Brewers: Essential tools for high-extraction brewing.

  • Maintenance & Consumables: Everything needed to keep your grinder and espresso machine performing at peak efficiency.
